The organic food is now studied for the development of aquaculture in Italy. This paper reports and analyses the last results obtained by CNR ISPA. We studied the effects of some natural antioxidants as potential substitutes of synthetic ones. The aqueous extracts of leaves of hazel nut and red grape pomace as well as rosemary oil have the highest antioxidant power. The rosemary oil and olive oil mill waste water were also tested and showed positive protective effects on feeding of sea bass and rainbow trout, respectively.
