In this chapter, we report the main applications involving the use of DNA microarrays as detection tools for foodborne pathogen identification in food matrices. At first, we describe the most recent applications of microarray technology in foodborne detection, focusing on the experimental results obtained. Then, emerging platforms for the miniaturized detection of pathogens are discussed with the description of some interesting assays and innovative applications. A final paragraph will be dedicated to the latest developments and trends in the "omics" field applied to foodborne pathogen detection.
