Neither quercetin, nor 3-O-acylquercetines, up to 0.1 mg/mL, showed any significant activity on selected gram-positive strains, gram-negative strains and yeasts. Conversely an interesting inhibitory activity on Candida rugosa lipase by Q and its esters was evidenced. These esters could be useful adjuvants in the therapy of infective diseases due to lipase-producing microorganisms.
