The objective of this study has been to evaluate the influence of nutrition on quantity and quality of milk in two family farms (organic vs traditional). Twenty buffalo cows in both farms were divided according to calving sequence in three groups. The data for milk yield were obtained from two mechanic milking (05.00 and 17.00 h) for both farms. The milk constituents were analyzed from the mixer of both milking and analyzed by infrared method Milk scan 133b. Fatty acid methyl esters were analyzed by gas chromatography according to Luna P. et al. (2005). Statistical package SPSS (2003) was used for statistic analysis. The results showed that nutrition has a significant influence on those characteristics of milk; in particular, milk obtained from an organic farm has shown richer in oleic and palmitic acids
