In this work, we present the results from dielectric measurements on soybean lecithin/isooctane/water gel. The pure solvent and the solution of lecithin in isooctane are also investigated for comparison. A low-frequency dielectric dispersion of the complex permittivity epsilon* is evidenced in the gel and analyzed within the framework of the phenomenological Cole-Cole model. The frequency of the maximum in the dielectric loss shows an Arrhenian behavior as a function of the temperature; this behavior is interpreted in terms of a strong influence of H20 diffusive motion, inside micelles, on the lecithin dipole reorientations.
