In this paper, a sensors array based on pure and doped SnO2 sol-gel thin films used for the discrimination of different Mediterranean salami is presented. Principal Component Analysis (PCA) results show good discrimination between different salami, between salame with different ripening and between salami produced by male and female swine. Microbiological analysis regarding micrococci and lactobacilli growth are, also, reported. Moreover Static Headspace\Gaschromatography\Mass Spectrometry (SHS\GC\MS) analysis are in progress to better understand and correlate the biological compounds analysis with the volatile ones of different salami.
