Dry weight and total protein content have been compared in developing, mature and germinating T.aestivum, T.turgidum and T.monococcum grains. Fractionation in different solubility class and characterization by SDS-PAGE of proteins of flour samples indicated a close relationship among synthesis, accumulation and degradation of storage proteins during two physiological periods of maturation and germination of wheat grains.
