Results of genetical, molecular and biochemical studies of durum wheat gluten proteins and the approaches for their manipulation are presented. In particular data on cloning and characterisation of genes encoding low-Mr glutenin subunits, the characterisation of the C-type subunits and the development of a series of isogenic lines differing in high-Mr glutenin subunit composition are described.
