Many scientific studies have shown that hydroxytyrosol and oleuropein (polyphenol mainly represented in the pulp of olives) are involved in the prevention and treatment of many diseases (coronary heart disease and cholesterol, LDL cholesterol, atherosclerosis, inflammation cancer and many other diseases). This work proposes to transfer the knowledge in the field of olive processing into the development of a new antioxidant elixir, which could be used for food and cosmetic application. the idea consists in the development of a treatment of olive mill wastewaters for the extraction and concentration of antioxidant polyphenols. After a treatment of bio-filtration and concentration of the olive mill waste-waters, the extract obtained has been analyzed for its polyphenols content, antiradical (by DPPH method) and antioxidant (ORAC method ) activity. The promising results revealed an high concentration of hydroxytyrosol, which could reach a concentration of 25-30 g/kg, conferring a high antiradical and antioxidant activity to the extract. The high stability over time of these properties in this new elixir makeit a perfect candidate for applications in human health, as ameliorative for food quality and conservation, and as oil, pads, cream, lotions enriched with polyphenols.
