A biennial research program founded by the Italian Ministry of University and Research (MIUR) entitled Environment, genotype and typicity in potato and artichoke was implemented involving three Italian regions: Apulia, Sicily and Tuscany. In this paper we resume the activity carried out on potato, whose aim was to define useful tools to link a typical product to a geographic production area.
