The aim of this article, that contains the first results of a research project about the food consumption in the higher educational institutes in the Kingdom of the Two Sicilies, is almost precise and circumscribed: to establish what, how much, how and why the students ate in the hostels that were annexed to the male higher education schools. The presentation is divided in three parts: the first one recapitulates the history and the main characteristics of these schools; in the second part we try to answer to our questions; the third and last part suggests some proposals for further and more detailed studies.
