Proteins, hydrolysates and peptides from both animal and vegetable sources exhibit specific biological activities, which may have effect on functional or pro-health properties of food products. Among the available technologies, membrane filtration is one of the most sustainable and cost-effective technique for the recovery and purification of protein-based compounds. This chapter provides a comprehensive overview on the use of barometric membrane processes, also in integrated systems, for the recovery of protein-based compounds from different sources (cereals, oilseeds, microalgae, soy, agro-food by-products, among others) highlighting typical advantages and limitations over competitive techniques.

Abstract
Proteins, hydrolysates and peptides from both animal and vegetable sources exhibit specific biological activities, which may have effect on functional or pro-health properties of food products. Among the available technologies, membrane filtration is one of the most sustainable and cost-effective technique for the recovery and purification of protein-based compounds. This chapter provides a comprehensive overview on the use of barometric membrane processes, also in integrated systems, for the recovery of protein-based compounds from different sources (cereals, oilseeds, microalgae, soy, agro-food by-products, among others) highlighting typical advantages and limitations over competitive techniques.I documenti in IRIS sono protetti da copyright e tutti i diritti sono riservati, salvo diversa indicazione.
