This chapter focuses on two widely used techniques for characterizing oleogels at different spatial length scales: X-ray diffraction (XRD) for the atomic to molecular level and ultra-small angle X-ray scattering (USAXS) for the nano- to the micro-level. Specifically, it examines the use of X-rays produced by synchrotron radiation light sources. These light sources provide high intensity, collimated, and bright X-rays, which yield diffraction and scattering measurements of exceptional quality. Consequently, researchers can use these measurements to reveal the crystalline organization of oleogels lipidic fraction, as well as the morphological and structural organization of their higher-order structures.
