This paper examines the new European Union legislation on the production and marketing of partially de-alcoholized wine and de-alcoholized wine, introduced by the 2021 CAP Reform, in the light of the theoretical reflection on sensory-based and experimental norms. The analysis of the legislation is developed focusing on two profiles: the innovation and the gradual extension of the scope awaiting further developments in research and experimentation.
