A study of the digestive enzymes of European eel was carried out in order to achieve information the digestive physiology of this species: total proteases, pepsin, trypsin, chymotrypsin, carboxypeptidases A and B, amylase and lipase were measured. After feeding, all enzyme patterns increased, particularly carboxypeptidase A and lipase in the intestine and stomach, respectively. The low levels of amylase activity measured in A. anguilla indicated the scarce hydrolytic activity over carbohydrates.
