The chapter describes the utilization of agroindustrial and fisheries by-products as sources of carotenoids (mainly ?-carotene, lycopene, and astaxanthin) and the recently proposed applications (mainly patented) related to the extraction of carotenoids from food processing residues (fruits, vegetables, animals), with an emphasis on the methods and mechanisms exploited by these technologies and on technical solutions for practical problems related to these applications.
