The increasing interest in the characterization of nutritionally significant carbohydrates in functional foods has created new demands for the development of rapid, sensitive and specific analytical methods for their identification and quantification. Moreover, in certain cases, specific carbohydrates can be used as food components which have specific physiological functions in selected products. The objective of this paper is to demonstrate with some practical example, the importance of developing efficient and flexible HPAEC-PAD and CZE methods for the separation of carbohydrates in some selected functional foods.
