The quantification of biodiversity within and across crops defines their potential of adaptation to climate evolution. This paper summarizes the main results in the quantitative descriptions of crops' climatic requirements. Some requirements of perennial crops are reported, in terms of thermal and water regime for fruit trees and for olive, respectively. A model of olive yield that accounts for the interaction between rainfall and bearing is described. As an example, the suitability of nine grapevine's cultivars in a study area is reported, determined through cvs' thermal requirements.
