This research has been aimed at restoring a swine Apulian population that comes from one of the most ancient swine breed in the South Italy, "Napoletan breed pig". The recovery started four years ago and, at the moment, twelve swine breeders are monitored in Capitanata's district. Thanks to selection of sows we obtained sucking pigs which show the same morphological characteristics described by the authors Stanga, Manetti, Leimogne, Roncalli, Faelli, Mascheroni and Montemurro. This rustic pigs, distributed in some farms of Foggia district, are surprising because of their ability to adapt themselves to the immediate pasture environment. By our research and in accordance with a famous local tradition a typical meat was obtained in order to produce sausages, salami and brawns.
