Because of the reported risks related to raw milk consumption, the research carried out during this PhD study focused on the analysis and improvement of the microbial quality and safety of raw milk for direct human consumption sold in the Apulia region. For this purpose the presence of spoilage and pathogenic bacteria and their evolution during domestic refrigeration were analyzed as well as the evolution of the pathogenic E. coli 0157:H7 strain artificially added in raw milk. Additionally the possibility to use the probiotic microorganism Lactobacillus rhamnosus GG to improve the quality and safety of this food was investigated.
A causa dei rischi correlati al consumo di latte crudo, la ricerca svolta durante questi studi di dottorato ha riguardato l'analisi ed il miglioramento della qualità e della sicurezza microbiologiche del latte crudo per il consumo umano diretto venduto in Puglia. Per questo scopo è stata analizzata la presenza dei batteri alterativi e patogeni e la loro evoluzione durante la frigoconservazione domestica così come l'evoluzione del ceppo patogeno E. coli 0157:H7 artificialmente aggiunto nel latte crudo. Inoltre è stata investigata la possibilità di impiegare il microrganismo probiotico Lactobacillus rhamnosus GG per migliorare la qualità e la sicurezza di questo alimento.
