The agro-economic potentialities of two old varieties of potato, the "Viola Calabrese" from the highland of Sila and the "Rossa di Cetica" from Pratomagno, are been recovered after a long period of forgetfulness. The research has concerned the setting up of the seed tuber production chain with not conventional techniques and the determination of nutritional, sensory and tastiness properties of ware potatoes. The qualitative profiles have shown to be important tools for the traceability of the production chain of potatoes.
