This paper surveys the interrelations between environmental sustainability, future possible shortage of food resources, food quality and the assessment of emerging protein sources to feed the world. Nowadays, a significant portion of the developing countries still suffers from an insufficient access to nutritious and safe food, but this problem might affect also developed countries in a next future due to the climatic changes and massive exploitation of current agricultural and animal resources.

Abstract
