Resveratrol (3,5,4'-trihyidroxystilbene) is a natural phenolic compound, which belong to phytoalexins. It is found in many plants, such as mulberry, peanut and grapes. Increasing interest in monitoring the presence of resveratrol in wine was caused by its role on human health. Recent studies have proved that this substance, cause of its antioxidant action, inhibits the oxidation of low-density lipoproteins (LDL), reducing the risk of miocardiac disease and arteriosclerotic pathologies. It has been also demonstrated that this substance inhibits cellular events associated with tumor initiation, promotion and progression, reduces cell death from oxidative stress, inhibits platelet aggregation and eicosanoid synthesis, and prevent anti-inflammatory activity.
