The ability of 29 lactic acid bacteria strains to produce phenyllactic (PLA) and 4-hydroxy-phenyllactic (OH-PLA) acids, metabolites involved in food quality and preservation, has been evaluated by HPLC analysis. Metabolite production was demonstrated for all strains of the species Lactobacillus plantarum, L. alimentarius, L. rhamnosus, L. sanfranciscensis, L. hilgardii, Leuconostoc citreum. Improvement of phenyllactic acid production was obtained in a selected strain by increasing the concentration of phenylalanine in culture and using low amounts of tyrosine. Finally, a particular procedure of bread-making aiming to reduce or delay microbial spoilage of bread and other yeast-leavened bakery products has been patented.
Ventinove ceppi di batteri lattici sono stati indagati per valutare la produzione dei metaboliti acido fenillattico (PLA) e acido 4-idrossi-fenillattico (OH-PLA) coinvolti nella qualità e conservazione degli alimenti. La produzione dei due metaboliti è stata dimostrata per tutti i ceppi delle specie Lactobacillus plantarum, L. alimentarius, L. rhamnosus, L. sanfranciscensis, L. hilgardii, Leuconostoc citreum. Il miglioramento della produzione di PLA da parte di un ceppo selezionato è stato ottenuto variando le concentrazioni degli amminoacidi fenilalanina e tirosina nel substrato di crescita. Infine, è stato messo a punto e brevettato un procedimento per la preparazione di pane e altri prodotti da forno lievitati con Saccharomyces cerevisiae che consente di ridurre o ritardare lo sviluppo di contaminanti fungini e batterici.
