Lentil hulls represent an organic by-product deriving from the industrial decortication process generally accounting for 20% of the total legume production. Aiming at the full valorization of such by-product in the perspective of a circular economy, the present work will present the comprehensive characterization by HR-MS and advanced bioinformatics tools of the proteomic and metabolomic profile of lentil hulls.

Abstract

Lentil hulls represent an organic by-product deriving from the industrial decortication process generally accounting for 20% of the total legume production.
