El objetivo de este trabajo es caracterizar el polen fresco de abeja para definir las propiedades nutricionales principales de este producto para su futura legislacio´ n. El polen de abeja orga´nico (n=5) cosechado en Lucca (La Toscana, Italia) fue estudiado mediante ana´lisis palinolo´ gico, contenido nutricional (materia seca, prote?´na cruda, l?´pidos, cenizas y contenido en carbohidratos), contenido en sustancias reactivas al a´cido tiobarbitu´rico (TBARs por sus siglas en ingle´s), y perfil de a´cidos grasos. Los ana´lisis de composicio´n qu?´mica mostraron una media de 849 g/kg de materia seca, 253 g/kg de prote?´na, 12.9 g/kg de l?´pidos, 24.7 g/kg de cenizas y 561 g/kg de carbohidratos. El valor medio de contenido en TBARs fue de 0.96 mg de malondialdehido /kg. En lo que respecta a la composicio´n de a´cidos grasos, los resultados mostraron diferencias entre las especies de polen orga´nico de abeja de la Toscana. Todas las especies de polen investigadas presentaron a´cido linoleico, con un valor medio de 55.4 g/kg del total de a´cidos grasos y a´cido ?-linoleico, con un valor medio de 147 g/kg del total de a´cidos grasos. Se encontro´ una ratio media de a´cidos grasos poliinsaturados (AGPs) n-6/n-3 de 1.70. Teniendo en cuenta que la ratio de AGPs n-6/n-3 y la ratio de a´cido linoleico/a´cido ?-linoleico son considerados importantes para la prevencio´n de enfermedades humanas, el polen de abeja orga´nico de la Toscana podr?´a tener importancia nutrace´utica.
